Broiled Sea Scallops with Garlic, Lime, and Prosciutto
For four Servings
INGREDIENTS:
= 16 fresh sea scallops
= 3 Tablespoons butter – melted
= 3-4 garlic cloves – chopped
= Juice from 1 lime, and lime wedges to serve (2-3 limes will be needed)
= 3-4 Tablespoons chopped herbs: cilantro, parsley, and basil. Reserve some for serving.
= Salt and freshly ground black pepper
= 3-4 thin slices prosciutto – cut into strips
= 16 natural large scallop shells – to cook and to serve
COOKING:
Place one scallop in each shell (or place all of them in an ovenproof dish)
In a small bowl combine the butter, garlic, lime juice and herbs and spoon the mixture over the scallops.
Season with salt and pepper, and add a few stripes of prosciutto to each shell.
Place the shells with scallops on a cookie sheet and then in the hot oven under the broiler and cook for 6 minutes.
Serve immediately in the shells, with lime wedges, fresh herbs, and fresh bread to soak up the delicious butter.
