Daikon and Red Radish Salad with Microgreens
For Four Portions
INGREDIENTS:
= 2 daikon radishes, peeled and trimmed
= 4-5 large red radishes, trimmed
= 2 tablespoons of rainbow microgreens
= 1 teaspoon black sesame seeds
= 1 tablespoon white wine vinegar
= 2 tablespoons olive oil
= ½ teaspoon salt
COOKING:
To slice the daikon and radish into fine long threads you can use a mandolin or just cut the radish with a knife.
In a mixing bow combine vinegar and oil and whisk well. Add the sliced daikon, red radish, microgreens, and sesame seeds – coat well.
Serve on a large platter.
